An innovative coconut-milk based curry, with bread fruit, that can be served with appam, idiappam or chappatis. Bread fruit (called sheema chakka in Malayalam) is nutritious and easily available…ideal for all the busy Mums!
Ingredients 

01. Bread fruit (chopped into small cubes) - 2 cups
02. Oil  -  2 tsp

03. Cinnamon- a 1” piece
      Cloves-2
      Cardamom-3
      Star Anise (Thakkolam) - 1

04. Ginger (sliced long) – 2 tsp
      Green chillies (split lengthwise) - 4
      Curry leaves – 2 stalks

05. Onions (chopped into cubes) – 2 (medium sized)
06. Coconut milk(2nd extract)- 2 cups
      Coconut milk(1st extract) – ½ cup

07. Curry leaves – 1 stalk
08. Salt – to taste

Preparation 

01. Heat oil in a heavy bottom pan, and fry the ingredients under 3.
02. When the aroma of the spices arises, add the ingredients under 4 and sauté for two minutes.
03. Add the onions and continue to sauté well.
04. When the onions begin to brown, add the chopped pieces of breadfruit and sauté again for a couple of minutes.

05. Next add the 2nd extract of coconut milk and  salt and keep covered to cook.
06. When the breadfruit pieces are cooked well, mash some of them with a large spoon.
07. Finally, add the 1st extract of coconut milk, along with the curry leaves. Remove the vessel from the flame as soon as the stew begins to boil. Your breadfruit stew is now ready to serve!
