A Tamil delicacy made from an unusual combination of pumpkin, dates and rose petals, the rose flower gulkhand is a dish for special occasions.
01. Pumpkin - 2 kg 02. Dates - 200 g 03. Rock sugar (locally known as kalkandam) - 50 g 04. Honey - 30 ml 05. Sugar - 1 ½ kg 06. Rose petals - 20 07. Ghee - 100 ml
01. Skin the pumpkin and grate. 02. Chop the dates. 03. Cook the grated pumpkin. Drain excess water and keep aside. 04. Heat ghee in a pan and add the pumpkin, sugar, honey, dates and rock sugar and allow cooking. 05. When cooked add the rose petals, mix and remove from stove. 06. Decorate with rose petals and rock sugar and serve.
